It’s a new quarter, and a perfect time to start cooking! If you’re like me, once classes start picking up, every day in your planner is filled from that first 8am class till the wee hours of the next morning. By the time you get home you’re exhausted and barely have the energy to do the essay that is due tomorrow, yet alone cook. So you convince yourself that it’s acceptable to just eat a bag of chips for dinner instead — I mean potatoes are still a vegetable, even if they are in chip form, right? Stay strong, because this delicious and scrumptious veggie taco recipe is the perfect opportunity to break the vicious cycle of eating poorly.
1 can of black beans
1 yellow squash
¼ cup of onion
1 red bell pepper
1 yellow pepper
¼ cup of corn
¼ cup of tomato
I packet of Taco Seasoning
Step 1: Dice vegetables and rinse and drain beans
Step 2: In a medium skillet heat olive oil and cook onion, squash, and zucchini for 3-5 minutes on medium to high heat while stirring occasionally
Step 3: Add in beans, peppers, and corn and cook for 5-7 minutes stirring occasionally
Step 4: Add in taco seasoning, turn heat down to medium-low and simmer until vegetables are fully cooked
Step 5: Serve tacos in a warm tortilla and add optional garnish of lettuce, radish, or any topper.
